Ingredients
- 1 kg bell peppers (red, green, yellow)
- 600 g plum tomatoes
- 150 g onions
- 2 tbsp olive oil
- 1 tsp paprika powder
- Salt
- black pepper (freshly ground)

Halve the bell peppers lengthwise, remove seeds and white membranes, wash the halves, quarter them and cut into wide strips.

Blanch the tomatoes, peel and remove stems. Cut the tomatoes into eighths. Peel and halve the onions, then slice into thin half-rings.

Heat the oil in a wide pot, sauté the onions, sprinkle with paprika powder. Add the pepper strips and tomatoes, season with salt and pepper, and simmer over high heat for about 3 minutes until some juice has evaporated. Reduce the heat, cover, and cook on low heat for about 20 minutes. Taste and serve.
