Honey-Glazed Duck

Ingredients
- 1.8 kg duck (whole, ready to cook)
- Salt
- freshly ground pepper
- 20 g butter
- 1 vanilla pod
- 2 tbsp liquid honey
- 2 tsp rosemary needles

Wash and pat the duck dry. Rub salt and pepper on both sides.

Split the vanilla pod lengthwise, scrape out the seeds and mix with the butter. Spread this mixture over the duck using a spatula.

Place the duck breast-side down in a roasting pan, pour about 150 ml water into the pan, and roast in a preheated oven at 160 °C (fan: 140 °C; gas: level 2) for approximately 30 minutes. Flip the duck and continue roasting at 250 °C (fan: 225 °C; gas: highest setting) for another 30 minutes, basting with pan juices several times. Finish by brushing honey over the duck and glazing it for a few more minutes. Sprinkle with coarse pepper and rosemary before serving.
