Honey-Glazed Chicken

Ingredients
- 1 tbsp Rapeseed Oil
- 640 g chicken breast fillets (4 fillets)
- 2 Garlic cloves
- 1 Shallot
- 1 Organic lemon
- 4 stalks tarragon
- 4 tbsp Honey
- Salt
- Pepper

Brush the baking dish with oil. Rinse the chicken breast fillets under cold water, pat dry and place them in the dish.

Peel and finely chop the garlic and shallot. Wash the lemon hot, pat dry, grate its zest and squeeze out the juice.

Wash the tarragon, shake off excess water, pluck the leaves and finely chop until 1 tbsp remains. For the marinate mix honey with lemon juice and zest, chopped tarragon, shallot and garlic, then season with salt and pepper.

Brush the fillets with the marinate and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 30–35 minutes, brushing with more marinate occasionally.

Finely chop the remaining tarragon and sprinkle over the chicken breasts.
