Nussbrot

Ingredients
- 500 g flour
- 4 tbsp oat bran
- 1 tbsp salt
- 1 cube yeast (21 g)
- 2 tbsp sugar
- 150 g walnut kernels
- 50 g butter
- butter (for the pan)

Mix the flour with 2 tbsp oat bran and salt, place in a bowl, press a well in the center, crumble the yeast into it, stir in the sugar and 5 tbsp lukewarm water, dust the edges with a little flour and cover; let rise in a warm spot for about 15 minutes.

Meanwhile roast the walnuts in a hot pan without fat until fragrant, remove, cool, and roughly chop. Add the walnuts, butter, and about 120 ml lukewarm water to the dough and knead well. Cover and rest another ~45 minutes.

Knead again, shape into a loaf, place in a greased loaf pan, brush with a little water. Sprinkle remaining oat bran on top, cover with a kitchen towel and let rest for another 15 minutes.

Preheat the oven to 180°C (350°F) fan‑forced or conventional heat.

Bake the bread in the preheated oven for 50–60 minutes. Cover promptly with foil so the surface does not brown too much.

Remove, cool, release from the pan and serve sliced.
