Ingredients

  • 1 kg starchy cooking potatoes
  • 100 g butter
  • 3 egg yolks
  • 1 egg
  • Salt
  • Pepper
  • nutmeg
  • 2 Tbsp whipping cream
  • 1 egg yolk

Instructions

    Peel the potatoes and boil them in salted water for 25 minutes. Drain and let steam off.

    While still hot, press the potatoes through a masher and mix with butter, egg, and egg yolks. Season with salt, pepper, and nutmeg.

    Transfer the mash to a piping bag fitted with a large star tip and pipe rosettes onto parchment-lined baking sheet. Whisk the remaining egg yolk with cream and brush over the Herzoginkartoffeln. Bake in a preheated oven at 220°C for 5–6 minutes until golden yellow.
