Herring with Thyme

Fresh herring fillets seasoned with thyme and lemon, served as a light summer starter featuring bright citrus and aromatic herbs.
Ingredients
- 8 green herring fillets (ready to cook)
- 2 tbsp oil
- 2 tbsp coarse mustard
- Salt
- Pepper (freshly ground)
- 16 thyme sprigs
- 8 thin lemon slices
- fresh herbs for garnish (e.g., thyme, parsley)
Instructions

Rinse the herring fillets and pat them dry. Whisk together oil, mustard, salt, and pepper to make a sauce, then brush it onto the inside of each fish.

Halve the lemon slices. Stuff the fish with thyme sprigs and lemon halves.

Place the stuffed herring in grill baskets, brush with additional sauce, and grill for about 10 minutes, turning occasionally. Sprinkle fresh herbs before serving.
