Salmon Tartare with Cucumber

Ingredients

  • 250 g very fresh salmon fillet
  • 1 Shallot
  • 100 g cucumber (1 piece)
  • 0.5 lime
  • 2 tbsp grape seed oil
  • Sea salt
  • Pepper
  • 4 sprigs dill

Instructions

    Rinse the salmon fillet under cold water, pat dry and cut into very small cubes.

    Peel the shallot and dice it finely. Peel the cucumber, halve it lengthwise, remove seeds, dice half of it and slice the rest with a vegetable peeler into thin strips. Wash the lime halves hot, pat dry, grate the zest and squeeze out the juice.

    Combine salmon cubes with shallot, cucumber cubes, lime juice and zest, and oil. Season with salt and pepper and form small semi-spherical portions from the mixture. Distribute onto four small bowls.

    Wash and shake off excess water on dill. Garnish the tartare with dill tips and cucumber strips.
