Herring Salad with Kefir Sauce

The herring salad with kefir sauce by Spoonsparrow is quick to make and scores with many healthy fatty acids.

Ingredients

  • 2 Apples
  • 1 Red Onion
  • 300 g matjes fillet
  • 400 g cooked beetroot (pre-cooked; vacuum sealed)
  • 2 sprigs parsley
  • 100 ml kefir
  • 2 tbsp wine vinegar
  • 2 tbsp Rapeseed oil
  • 1 tsp Honey
  • Salt
  • Pepper
  • 20 g sunflower seeds (2 tbsp)

Instructions

    Peel and clean apples and onion. Cut the onion in half and slice into thin strips. Dice the apples. Pat matjes fillets dry and cut into pieces.

    Dice beetroot. Wash parsley, pat dry, pluck leaves and chop.

    For the dressing whisk kefir, vinegar, oil, honey, salt, and pepper together.

    Combine herring, onion, apples, and beetroot. Season salad and sprinkle with parsley and sunflower seeds.
