Herring Salad with Apples, Onions and Yogurt Vinaigrette

A herring salad featuring fresh apples, onions, and a creamy yogurt vinaigrette. Try this dish and many others from Spoonsparrow!

Ingredients

  • 6 pickled herring fillets (Bismarck herrings, glass jar)
  • 2 dill pickle cucumbers
  • 2 shallots
  • 1 tart apple
  • 0.5 untreated lemon (juice)
  • 150 g Sour cream
  • 100 g plain yogurt
  • 1 tsp freshly grated horseradish
  • 2 tbsp white wine vinegar
  • 3 tbsp sunflower oil
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp chives sprigs

Instructions

    Drain the herring fillets well, cut into bite-sized pieces and slice the dill pickles into rounds. Peel the shallots and cut them into thin rings. Wash the apple, quarter it, remove the core, slice the flesh crosswise into thin wedges and drizzle with 1 tbsp lemon juice.

    Whisk together the sour cream, yogurt, horseradish, vinegar, and oil, then season with salt, pepper, and the remaining lemon juice. Distribute all salad ingredients (except the chives) onto glasses, pour the yogurt dressing over them, and sprinkle with chive sprigs before serving.
