Herring Salad with Apple
A fresh herring salad featuring crisp apples and zesty lime, crafted by Spoonsparrow.
Ingredients
- 2 untreated limes
- 3 tart apples (e.g., Boskop)
- 1 tbsp honey
- 1 handful spinach
- 4 Cherry Tomatoes
- 8 herring fillets (Matjes)

Preheat the oven to 200°C with top and bottom heat and line a baking tray with parchment paper.

Wash the limes, dry them, grate the zest, then squeeze out the juice. Wash the apples and use an apple corer to remove the core. Slice horizontally into about 1 cm thick rounds, drizzle with lime juice and honey, and bake for roughly 25 minutes.

Meanwhile wash and clean the spinach. Wash the tomatoes and halve them lengthwise. Rinse the herring fillets and pat dry with paper towels.

Let the apple slices cool briefly, then stack two on top of each other. Place 2–3 spinach leaves over them. Wrap a half tomato around a herring fillet, lay it on the apples, and secure with stems to form a small tower. Drizzle or sprinkle lime zest and remaining juice over the towers.

Serve two towers per plate, garnished with flower petals.
