Ingredients

  • 6 Matjes fillets
  • 1 pickled cucumber
  • 2 stalks celery
  • 250 g boiled potatoes
  • 2 sour Boskop apples
  • 0.5 lemon (juice)
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp finely sliced dill sprigs
  • 100 g mayonnaise
  • 2 tbsp pickle liquid
  • 50 g whipped cream
  • 1 lettuce leaf
  • 2 hard‑boiled eggs
  • dill sprigs for garnish

Instructions

    Rinse the Matjes fillets briefly, pat dry and cut across into strips.

    Cut the cucumber into thin strips. Wash the celery and cut across into pieces. Dice the potatoes into small cubes.

    Peel the apples, quarter them, remove cores and slice crosswise. Drizzle with lemon juice. Combine all prepared ingredients in a bowl and season with vinegar, salt, and pepper.

    Whisk mayonnaise with pickle liquid, dill, and whipped cream; fold into the herring salad and adjust seasoning to taste.
