Ingredients
- 1 head endive (ca. 500 g)
- 200 g blue grapes
- 4 mandarins
- 125 g Emmental cheese
- 40 g walnut kernels
- 2 slices toast bread
- 1 tbsp butter
- 2 Garlic cloves
- 3 tbsp sunflower oil
- 1 tsp sharp mustard
- 1 tsp maple syrup
- Salt
- Pepper (freshly ground)

Wash, trim, dry and slice the endive into thin strips. Wash grapes, halve them and deseed if necessary. Peel mandarins and cut out the segments, catching the juice and squeezing out remaining flesh. Dice the cheese and chop walnuts. Toast bread in hot butter until golden brown; drain on kitchen paper.

Peel garlic cloves and blend with mandarin juice, oil, mustard, and syrup in a blender. Add water as needed and season with salt and pepper.
