Mediterranean Pasta Salad

Ingredients
- 350 g spaghetti
- 500 g young spinach
- 2 red bell peppers
- 3 potatoes
- 3 tbsp olive oil
- 80 g pitted black olives
- 2 tbsp balsamic vinegar
- 1 tsp Mustard
- 2 Garlic cloves
- 6 tbsp Olive oil
- Salt
- Pepper
Instructions

Cook pasta according to package instructions, drain, rinse with cold water and let it dry well. Halve the bell peppers, remove seeds, wash, and cut into large pieces.

Peel, wash, dice potatoes and sauté in olive oil, turning occasionally for 10-15 minutes. Add the bell peppers and cook briefly more.

Wash spinach thoroughly and blanch in boiling salted water for 2 minutes, drain, rinse with cold water and let it dry well. Halve olives and combine all ingredients in a bowl.

Whisk vinegar with salt and mustard, peel garlic, squeeze into the mixture, add oil, season with pepper, and drizzle the dressing over the salad.
