Herring Gratin with Anchovies and Apples

Ingredients
- 800 g herring (ready-to-eat, skin on)
- 4 tart apples
- 4 anchovy fillets
- butter (for greasing)
- 4 tbsp fresh chopped parsley
- Pepper (freshly ground)
- 2 egg yolks
- 400 g heavy cream (33% fat)
- Salt
- Grated nutmeg
Instructions

Preheat the oven to 180 °C fan. Wash the herring fillets under running cold water and dry with kitchen paper.

Peel, halve, core and thinly slice the apples. Drain the anchovy fillets and finely chop them.

Grease a square baking dish with butter and arrange half of the fillets. Season each fillet with pepper and scatter some chopped anchovies. Top with apple slices, sprinkle parsley, then cover with the remaining herring fillets.

Whisk the cream with the egg yolks, salt, pepper and nutmeg, then pour over the herring. Bake in the hot oven for 25–30 minutes until golden brown.
