Ingredients
- 200 g Flour
- 2 Eggs
- 1 pinch salt
- 400 ml milk
- 2 tbsp plant oil
- 1 handful mixed herbs (e.g., nettle, garlic rocket)
- 3 Carrots
- 3 tbsp sour cream
- 5 tbsp crème fraîche
- Salt
- Pepper (from the grinder)
Instructions

Whisk the flour with the eggs, salt and milk until smooth. Lightly grease a pan and pour a small ladle of batter in. Tilt and rotate the pan to spread the batter evenly and cook each side until golden brown. Remove, set aside and repeat with remaining batter.

Rinse the herbs, shake dry and pick off the leaves. Peel the carrots and grate coarsely or cut into fine strips.

Whisk the sour cream with the crème fraîche and season with salt and pepper.

Spread the cream on the pancakes, top with carrot strips and herb leaves, roll up and slice into 4 cm wide pieces.
