Herb Roasted Potatoes French Style

Ingredients

  • 1.2 kg small young firm-cooking potatoes
  • 2 white onions
  • 6 Garlic cloves
  • 1 bundle mixed herbs (thyme, sage, rosemary and oregano)
  • 4 bay leaves
  • 5 tbsp olive oil
  • Sea salt

    Preheat the oven to 200°C.

    Wash the potatoes thoroughly and cut them in half lengthwise. Peel the onions and slice into thin strips. Peel the garlic and finely chop it. Wash the herbs, shake off excess moisture, pluck leaflets from some stems, and roughly chop larger herbs. Place the potatoes with the herbs in a baking dish and pour 125 ml water over them. Add bay leaves, drizzle with oil, lightly salt, and bake in the oven for about 45 minutes.
