Herb Panna Cotta

Ingredients
- 2 bunches basil
- 5 sheets gelatin
- 500 ml whipping cream
- Salt
- Pepper (freshly ground)
- 200 g red cherry tomatoes
- 200 g yellow cherry tomatoes
- 100 g shallots
- 25 g brown sugar
- 125 ml balsamic vinegar
- 80 g black olives (pitted)
- Salt
- Pepper (freshly ground)
- Cayenne pepper
- olive oil (for the molds)

Instructions

Wash, dry and chop basil. Soak gelatin in cold water. Heat cream, add basil and blend finely. Add drained gelatin, stir until dissolved and season with salt and pepper. Grease the serving molds with oil and pour the basil cream into them. Refrigerate for at least 3 hours.

Wash, dry and halve cherry tomatoes. Peel and finely dice shallots. Melt brown sugar over low heat in a pot, deglaze with balsamic vinegar, add shallot cubes and simmer about 5 minutes. Stir in cherry tomatoes and cook another 2 minutes. Add halved olives and season with salt, pepper and cayenne pepper.

Finally, pour the herb panna cotta onto plates (if necessary, briefly dip molds in hot water) and spread the relish around. Serve garnished with a few basil leaves.
