Ingredients

  • 2 handfuls mixed herbs (e.g., chives, parsley, basil, tarragon)
  • 10 eggs
  • 50 ml heavy cream
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Rapeseed oil
  • 2 tbsp butter
  • 60 g sour cream

Instructions

    Wash the herbs, shake dry and finely chop.

    Whisk the eggs with the cream and herbs. Season with salt and pepper.

    Heat a little oil and butter in a non-stick pan, pour in a ladle of the egg-herb mixture and cook slowly for 3-4 minutes until set. Repeat for all four omelettes. Serve each finished herb omelette with a dollop of sour cream.
