Herb Meatballs with Dip

The herb meatballs and dip from Spoonsparrow are perfect for a picnic or lunch break.

Ingredients

  • 5 g parsley (0.25 bunch)
  • 800 g ground beef
  • 30 g oatmeal (4 tbsp)
  • 40 g mustard (2 tbsp)
  • 1 egg
  • Salt
  • Pepper
  • paprika powder
  • 4 tbsp olive oil
  • 2 sprigs Mint
  • 300 g Greek yogurt (10% fat)

Instructions

    Wash, dry and chop the parsley for the meatballs. Mix ground beef, oatmeal, mustard, egg and parsley together. Season with salt, pepper and paprika.

    Shape about 24 small balls from the mixture using slightly wet hands. Heat 3 tbsp oil in a large pan. Fry the balls in batches over medium heat until golden brown on all sides, about 4–5 minutes per batch.

    Meanwhile, wash, dry and chop the mint for the dip. Mix yogurt with remaining oil and mint. Season with salt and pepper. Serve the meatballs with the dip.
