Herb Lamb Rack with Vegetables

Ingredients
- 2 lamb racks (about 500 g each)
- Salt
- colored pepper (freshly ground)
- 2 tbsp olive oil
- 200 ml dry white wine
- 200 ml lamb stock
- 800 g small, firm potatoes
- 250 g green beans
- 4 fresh garlic cloves
- 1 handful herbs (thyme and rosemary)

Preheat the oven to 180°C with fan and top heat.

Rinse the lamb and pat it dry. Season with salt and colored pepper, then brown all sides in a hot pan with oil. Deglaze with wine and a bit of stock. Peel, wash, and arrange the potatoes around the meat. Season them as well and bake for about 45 minutes, basting the meat with its juices and adding more stock if needed.

Wash, trim, and during the last 15 minutes add the green beans along with the peeled, pressed garlic cloves to the potatoes. Rinse the herbs, shake dry, pluck, and scatter over the lamb. Taste the sauce and serve everything in the pan as desired.
