Ingredients

  • 1 Spiegelkarpfen (ca. 1,5 kg, filleted and cut into steaks)
  • Salz
  • Pfeffer (freshly ground)
  • 1 Lorbeerblatt
  • 1 Knoblauchzehe
  • 1 Thymianzweig
  • 350 ml kräftiger Rotwein
  • 2 EL Zitronensaft
  • 100 g Schalotten (halved or quartered depending on size)
  • 3 EL Olivenöl
  • 200 g Zucchini (cut into thick sticks)
  • 200 g Staudensellerie (sticks cut into thick pieces)
  • 400 g Kartoffeln (peeled and sliced)
  • Salz
  • Pfeffer (freshly ground)
  • 3 EL Semmelbrösel
  • 2 EL Butter

Instructions

    Coat the carp steaks in a bowl with the marination and turn them. Marinate in the refrigerator for at least 3 hours. Quickly sauté the shallots in hot olive oil in the baking dish, layer the potatoes, celery, and zucchini, season with salt and pepper, and briefly heat on the stove.

    Pan‑fry the carp pieces in hot oil, place them in the baking dish, pour over the marination, sprinkle breadcrumbs on top. Bake the fish on the lowest rack of a preheated oven at 220°C. Melt butter and brush the fish after 10 minutes of cooking.

    After another 10 minutes drizzle with remaining butter and bake for about 20 more minutes until finished. Plate the carp with the roasted vegetables and serve with fresh garlic baguette.
