Ingredients
- 300 g basmati rice
- Salt
- 1 clove garlic
- 30 g ginger
- 6 Spring Onions
- 3 tbsp Sesame oil
- 4 eggs
- 1 tsp turmeric powder
- Salt
- black pepper (freshly ground)
- 4 tbsp chopped chives

Wash the rice and bring to a boil in water with slightly less than double the amount, lightly salted. Cover and simmer over low heat for about 25 minutes until cooked. Let the rice cool. Peel and finely chop the garlic and ginger. Wash, trim, and cut the spring onions into fine rings.

Heat oil in a pan and fry the rice for 2-3 minutes. Add the garlic, ginger, and spring onion rings, stir-frying together for another 3-4 minutes. Whisk the eggs with turmeric and pour over the rice. Stir and let thicken for 2-3 minutes, seasoning with salt and pepper. Sprinkle chopped chives before serving.
