Ingredients
- 3 handfuls of bird's-foot trefoil
- 1 stalk of lemon balm
- 2 tbsp lemon juice
- 2 tbsp Apple cider vinegar
- 1 tsp Honey
- 4 tbsp rapeseed oil
- Salt
- Pepper (freshly ground)
- 1 apple
- 1 orange
- 1 Banana
- edible flowers for garnish (e.g., nasturtium)
Instructions

Rinse the bird's-foot trefoil, shake dry and cut into small pieces including stems, leaves, and flowers. Rinse the lemon balm, shake dry and pluck the leaves.

Whisk together lemon juice, vinegar, honey, oil, salt, and pepper to make the dressing and taste.

Wash the apple, quarter it, remove the core, and chop into small cubes. Peel the orange, separate the segments, and cut into pieces. Peel the banana and slice. Combine the fruit with the bird's-foot trefoil and lemon balm, toss with the dressing, and serve on plates topped with scattered edible flowers.
