Ingredients

  • 300 g glass noodles
  • 1 red chili pepper
  • 1 Zucchini
  • 1 onion
  • 1 Garlic clove
  • 1.5 cm fresh ginger
  • 100 g mushrooms
  • 1 red bell pepper
  • 1 tart apple (e.g., Granny Smith)
  • 400 g large shrimp (peeled and deveined)
  • 6 tbsp vegetable oil
  • 1 tbsp freshly chopped coriander leaves
  • 1 tbsp lime juice
  • 1 tbsp Rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp fish sauce
  • pepper (ground)
  • 0.5 tsp palm sugar

Instructions

    Place the glass noodles in a bowl, pour boiling water over them, let soak for 5-10 minutes until cooked, drain and rinse with cold water. Cut into small pieces with scissors.

    Wash the chili, deseed and finely chop. Wash the zucchini, halve lengthwise, remove seeds and dice small. Peel and finely chop the onion, garlic, and ginger. Clean the mushrooms, halve and slice very thinly. Wash the bell pepper, halve, remove seeds and white membranes, cut into narrow strips. Peel the apple, quarter, remove core, and dice very small.

    Wash the shrimp, pat dry and sear in a hot pan with 2 tbsp oil for about 2 minutes on each side. Remove and let cool to lukewarm.

    Combine the vegetables, chili, ginger, apple, noodles, shrimp and coriander together.

    Whisk lime juice with vinegar, soy sauce, fish sauce and remaining oil; season with pepper and palm sugar. Drizzle the vinaigrette over the salad, toss, taste and serve in bowls.
