Ingredients

  • 1.5 kg green asparagus
  • Sea salt
  • 1 tbsp sugar
  • 4 tbsp balsamic vinegar
  • 4 tbsp grape seed oil
  • 1 tsp Honey
  • 60 g Parmesan
  • 4 untreated lemons

Instructions

    Peel the lower third of the asparagus and place in boiling salted water with 1 tbsp sugar. Simmer for about 10 minutes until just tender.

    Whisk the balsamic vinegar, oil, honey, and salt together to make the dressing. Drain the asparagus, briefly rinse, and arrange on a platter. Drizzle warm dressing over it. Grate parmesan on top. Halve the lemons, drizzle individually at the table, serve.
