The Herb Fries from Spoonsparrow taste great as a side dish and bring plenty of aroma to the plate.

Ingredients

  • 850 g waxy potatoes
  • 10 g corn starch (1 tbsp)
  • 2 tbsp olive oil
  • Salt
  • 1 bunch herbs (20 g; parsley, thyme)
  • 30 g Gouda cheese (48% fat in solids)

Instructions

    Peel, wash, and cut the potatoes into sticks. Rinse them in cold water, drain, and pat dry with paper towels.

    Add the corn starch and mix well. Stir in the oil and salt. Spread the fries on a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C (160 °C fan‑forced; gas: level 2–3) for 30 minutes, turning them after 15 minutes.

    Meanwhile grate the cheese. Wash, dry, and chop the herbs, then mix them with the cheese. Season the fries and sprinkle the herb‑cheese mixture over them.
