Ingredients
- 150 g honey
- 75 g whole cane sugar
- 100 ml milk
- 1 tsp Baking Soda
- 1 tbsp anise seeds
- 1 tsp ground cinnamon
- 0.5 tsp ground ginger
- 1 pinch salt
- 50 g Raisins
- 100 g finely milled rye flour
- 150 g finely milled wheat flour
- 0.5 organic lemon (zest)
- 2 egg yolks
- 1 tbsp honey
- 2 tbsp lukewarm water

Preheat the oven to 180°C.

Add the honey, sugar and milk to a pan, warm while stirring and dissolve the baking soda in it. Mix the remaining ingredients together with the wheat and rye flour in a bowl. Add the honey‑milk mixture, lemon zest and egg yolks. Stir well for about 5 minutes, then pour into a greased and floured loaf tin. Bake in the hot oven on the lower rack for 40–45 minutes.

Let it cool slightly in the tin, transfer to a wire rack and brush with honey water (mix honey with water beforehand).
