A fresh cookie recipe featuring soft butter and almonds.

Ingredients

  • 250 g soft butter
  • 75 g sugar
  • 50 g powdered sugar
  • 1 packet vanilla sugar
  • 400 g flour
  • 125 g peeled, ground almond kernels
  • whipped cream (as needed)
  • 150 g sugar
  • 1 tsp vanilla essence

Instructions

    Preheat the oven to 150°C.

    1. Prepare the soft butter and remaining ingredients.

    2. Beat the butter until fluffy.

  4. 4.

    3. Add the sugar and sift in the powdered sugar; mix with the vanilla sugar until creamy.

    4. Add the almonds and a bit of flour, mixing quickly with a spoon. Incorporate only enough flour so the dough no longer sticks and is slightly moldable. If too much flour, stir in some cream.

    5. Cut small walnut-sized pieces and roll into balls with floured hands.

    6. Place the dough balls on a parchment-lined baking sheet, flatten them, bake for about 18‑20 minutes.

    7. Mix sugar and vanilla essence in a bowl.

    8. While still warm, roll the golden‑yellow cookies in the vanilla sugar mixture and let cool.
