Hearty Roasted Skillet

A hearty roasted skillet from Spoonsparrow always hits the mark.

Ingredients

  • 3 Vienna sausages
  • 0.5 bunch mixed herbs (e.g., parsley, basil, chives, dill)
  • 700 g firm, cooked potatoes (from the day before)
  • 2 tbsp butter
  • 150 g green peas (frozen)
  • Salt
  • black pepper (freshly ground)
  • 200 g Gouda cheese (sliced)

Instructions

    Slice the sausages. Wash and dry the herbs, then finely chop them. Slice the potatoes and fry them in a large non‑stick skillet for about 10 minutes until golden brown.

    Add the peas and sausage slices and cook together for another 5 minutes. Stir in the herbs and season with salt and pepper to taste.

    Cut the Gouda into strips, arrange them in a lattice pattern over the skillet, cover with a lid, and bake at low temperature for 5 minutes until gratinated. Serve directly from the skillet.
