Hearty Lentil Soup

A hearty lentil soup from Spoonsparrow always receives great reviews.
Ingredients
- 300 g brown table lentils
- 2 carrots
- 2 firm potatoes
- 1 stalk Celery
- 1 stalk leek
- 1 onion
- 100 g Ham
- 2 tbsp Vegetable oil
- 1 l vegetable broth
- 1 tbsp wine vinegar
- Salt
- black pepper (freshly ground)
- 2 tbsp freshly chopped parsley
Instructions

Wash and drain the lentils. Peel, wash, and dice or cut the carrots, potatoes, and celery into pieces; slice the leek into rings. Peel and finely chop the onion.

Cube the ham and brown it in hot oil with the onions. Add the lentils and pour in the broth.

Add the remaining prepared vegetables and a bay leaf to the pot and simmer gently for about 40 minutes, stirring occasionally and adding more broth if needed.

Finally remove the bay leaf and season with vinegar, salt, and pepper. Serve the hearty lentil soup sprinkled with parsley.
