Hearty Kale Pie

Ingredients

  • 150 g flour
  • 1 pinch salt
  • 100 g cold butter
  • 1 egg
  • soft butter (for the pan)
  • flour (for working)
  • 300 g Kale
  • 1 Shallot
  • 1 Garlic clove
  • 1 tbsp plant oil
  • 100 ml dry white wine
  • Salt
  • pepper (ground)
  • nutmeg
  • 200 ml whipping cream
  • 100 g crème fraîche
  • 60 g Jarlsberg or Emmental cheese
  • 2 Eggs
  • 200 g chorizo

Instructions

    Sift flour onto a work surface, mix with salt and create a well in the center. Cut cold butter into small pieces, distribute around the well, add egg to the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

    Preheat oven to 200°C (400°F) with upper and lower heat. Butter a tart pan.

    Wash, clean kale, trim tough leaf edges and cut into fine strips. Peel shallot and garlic, finely dice them and sauté with kale in hot oil for about 2 minutes. Deglaze with wine and simmer gently for about 5 minutes until liquid evaporates. Season with salt, pepper and nutmeg, then remove from heat.

    Roll out dough on floured surface and line the tart pan. Spread the kale mixture over the dough.

    Whisk cream, crème fraîche, cheese and eggs together, season with salt and pepper, pour over kale. Slice chorizo diagonally and scatter over the pie. Bake in preheated oven for about 40 minutes until golden.

    Serve warm with a side salad or crusty bread.
