Hearty Fried Artichokes

Ingredients

  • 16 small artichokes
  • 250 g chorizo
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1 tbsp freshly chopped rosemary
  • 1 tsp lemon juice
  • Salt
  • Pepper (freshly ground)

Instructions

    Trim the hard leaf tips and outer leaves of the artichokes, then clean the stems. Cut in half and slice into thin strips. Slice the chorizo and combine with the artichokes in a large hot pan over oil, stirring gently, and cook slowly golden brown for 6-8 minutes. Peel the garlic and press it into the mixture. Add rosemary during the last 1-2 minutes to wilt. Finally drizzle with lemon juice and season with salt and pepper.
