A hearty bean stew from Spoonsparrow: green beans, smoked sausage and bell peppers unite into a savory delight!

Ingredients

  • 2 small onions
  • 2 tbsp oil
  • 3 red bell peppers
  • 600 g frozen green beans
  • 300 g smoked sausage
  • 1 l broth
  • 1 bunch flat-leaf parsley
  • Salt
  • Pepper
  • 1 tsp paprika powder
  • 1 sprig bean herb

Instructions

    Peel and chop the onion. Heat the oil in a pot and sauté the onions until translucent. Cut the bell pepper in half, seed it, wash and pat dry, then dice into small cubes. Add the beans, bean herb and pepper cubes to the onions and stir briefly. Slice the smoked sausage and add it with the vegetables.

    Pour in the broth and season generously with salt, pepper and paprika powder. Simmer gently over medium heat for 20-25 minutes.

    Wash the parsley, shake dry and pick off the leaves. Roughly chop the leaves. Adjust seasoning as desired. Sprinkle the hearty bean stew with parsley before serving.
