Rice Noodles with Fried Tofu
Rice noodles with fried tofu is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.
Ingredients
- 500 g tofu (natural)
- 3 cm fresh ginger
- 2 cloves garlic
- 4 Spring Onions
- 20 silver onions
- 400 g rice noodles
- 5 eggs
- light soy sauce
- peanut oil
- 1 red chopped chili pepper
- lime juice
Instructions

Slice the tofu into 1 cm thick slices and then cut into 1 cm wide by 4 cm long strips. Peel and finely chop the ginger and garlic. Wash, trim, and slice the spring onions into thin rings. Peel the silver onions and halve or quarter them.

Cook the noodles in boiling salted water until al dente.

Whisk the eggs with 2 tablespoons soy sauce and cook into omelets in a hot pan with a little oil. Remove and break into pieces.

Fry the tofu in a hot wok with 3 tablespoons oil until golden brown all around. Remove and set aside. Sauté the onions, chili, garlic, and ginger in the wok, then add the drained noodles, tofu, and eggs. Stir-fry for 2-3 minutes. Season with soy sauce and lime juice, plate, and serve.
