Shiitake Noodles with Sesame

Ingredients

  • 500 g soba noodles
  • 400 g soybeans (frozen)
  • 150 g shiitake mushrooms
  • 30 g sesame seeds (2 tbsp)
  • 1 tbsp Sesame oil
  • soy sauce
  • Cayenne pepper

Instructions

    Cook the noodles and soybeans separately in boiling water according to package instructions, then drain.

    Meanwhile, clean the mushrooms and slice them. Toast the sesame seeds in a dry pan until fragrant, then set aside.

    Heat the oil in a pan and sauté the mushrooms over medium heat for 2–3 minutes. Add the noodles and soybeans and stir-fry for another 1–2 minutes.

    Add the sesame seeds and season with soy sauce and cayenne pepper. Divide the shiitake noodles among four plates.
