Harissa Tofu and Grilled Peaches

Harissa tofu and grilled peaches from Spoonsparrow is a delicious grill recipe from vegan cuisine.

Ingredients

  • 500 g Tofu
  • 1 clove garlic
  • 1 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 Lime (juice)
  • 1 tsp date syrup
  • Salt
  • Pepper
  • 3 peaches
  • 20 g arugula (1 handful)
  • 45 g mixed seeds (e.g., sunflower, pumpkin, sesame)
  • 1 tsp organic lemon zest
  • 1 handful edible flowers for garnish (e.g., nasturtium blossoms)

Instructions

    Slice tofu into about 1 cm thick slices. Peel and chop the garlic. Mix with harissa, olive oil, lime juice, date syrup, salt, and pepper. Toss tofu with the spice mixture and marinate for about an hour.

    Meanwhile wash peaches, halve them and remove pits. Rinse arugula, wash and pat dry.

    Grill tofu and peaches on a hot grill, turning occasionally, for 4–5 minutes. Arrange arugula on a plate, top with peaches and tofu. Mix seeds with lemon zest, sprinkle over the dish, and garnish with flowers before serving.
