Ham Roast

Ingredients

  • 1 onion
  • 5 cloves of mace
  • 2 Bay leaves
  • 5 peppercorns
  • 3 allspice berries
  • 2 kg pickled pork ham (with rind)
  • 3 tbsp medium hot mustard
  • 1 tsp freshly chopped rosemary
  • 1 tbsp honey
  • 2 egg yolks
  • 4 Tbsp breadcrumbs

    Skewer the onion with the mace. Place the remaining spices and the ham in a large pot, cover with water to three-quarters height, bring to a boil (skim off any foam if necessary) and simmer covered for about 4 hours.

    Preheat the oven to 200°C fan-forced. Mix the mustard with rosemary, honey, egg yolks and 3 tbsp breadcrumbs. Remove the ham from the broth, pat dry with kitchen paper and brush with the mustard mixture. Sprinkle with the remaining breadcrumbs and bake in the preheated oven on a rack (fat pan underneath) until crisp and golden brown. Take out of the oven and serve thinly sliced with a dip, compote or boiled potatoes and red cabbage.
