Cod Fillet with Baked Summer Vegetables

Ingredients
- 1 lemon
- 800 g cod fillet (4 cod fillets)
- Salt
- Pepper
- 300 g cherry tomatoes
- 2 Zucchini
- 2 red onions
- 4 tbsp black olives
- 8 tbsp olive oil
- 4 sprigs basil

Squeeze the lemon.

Rinse the cod fillets under cold water, pat dry, split lengthwise, drizzle with lemon juice and season with salt and pepper.

Wash and halve the cherry tomatoes. Wash, trim and slice zucchini lengthwise. Peel and cut onions into strips.

Place vegetables and olives in a baking dish, drizzle with 4 tbsp oil, season with salt and pepper, mix well and bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for about 5 minutes. Then spread the fish on top, drizzle with remaining oil and bake another 10 minutes.

Meanwhile wash basil, shake dry, pluck leaves and cut into rough strips.

Arrange the vegetables with the fish on plates and garnish with basil.
