Halibut with Fruity Salsa

Ingredients
- 4 pieces halibut fillet (about 180 g)
- juice of one lemon
- Salt
- Pepper (freshly ground)
- 1 Green Chili Pepper
- 1 ripe Mango
- 1 Shallot
- fresh coriander
- 1 red bell pepper
- 3 tbsp orange juice
- 4 tbsp oil
- flour (for dusting)
- coriander leaves (for garnish)
- lemon wedges (for garnish)
Instructions

Wash and pat the fish fillets dry, then season with salt, pepper, and lemon juice. Wash the chili pepper, slice it lengthwise, deseed, and finely chop. Peel the mango, remove the flesh from the pit, and dice finely. Reserve the juice.

Peel and dice the shallot finely. Wash coriander, shake dry, and chop the leaves. Wash the bell pepper, deseed, remove white membranes, and cut into about 1/2 cm cubes.

Combine chili, mango, bell pepper, shallot cubes, and coriander with orange juice and reserved mango juice; season with pepper.

Grill the fillets on a not-too-hot grill for about 3 minutes per side (or cook in a hot pan with oil for about 3 minutes per side). Transfer to warmed plates and spoon the mango salsa over. Garnish with coriander leaves and lemon wedges before serving. Pair with, for example, blanched sugar snap peas.
