Ingredients

  • 600 g fresh arctic char fillet (skinless, ready to cook)
  • 1 untreated lemon
  • 3 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp pitted black olives
  • 8 sprigs mint
  • 400 g orzo pasta

Instructions

    Wash the arctic char, pat dry, remove any excess fat and sinew strands, and cut into 2 cm cubes. Rinse the lemon hot, grate its zest and squeeze out the juice. Mix the lemon zest with the juice, oil, salt and pepper, then marinate the fish cubes in this mixture.

    Cover and refrigerate for 30 minutes. Meanwhile, drain the olives and quarter them. Wash the mint, shake dry and pluck the leaves. Cook the orzo pasta in boiling salted water until al dente.

    Thread three fish cubes onto each mint sprig and sear in a hot grill pan for 2-3 minutes per side, occasionally basting with the remaining marinade. Drain the pasta, mix in the olives, plate it, and arrange two fish skewers on top of each serving. Garnish with mint leaves and serve.
