Halibut with Chili Butter

Ingredients
- 2 thick halibut fillets (about 220 g)
- Salt
- Pepper (freshly ground)
- 1 tbsp Olive Oil
- 1 Tbsp parsley
- 3 tbsp butter
- 100 ml fish stock (from a jar)
- a pinch chili powder
- 400 g sugar snap peas
- lettuce (optional)
Instructions

Wash halibut fillets, pat dry, brush with oil and season with salt and pepper.

Grill each side of the fillets for about 3 minutes in a grill pan, then remove and sprinkle with parsley.

Wash and trim sugar snap peas, boil in salted water for about 4 minutes, drain, rinse, and let them drip dry.

Bring chili powder and fish stock to a quick boil in a saucepan, then remove from heat and stir in butter pieces.

Plate halibut with chili butter, sugar snap peas, and a bit of lettuce.
