Sea Bass with Olives and Tomatoes

Ingredients

  • 800 g firm potatoes
  • Salt
  • Pepper (freshly ground)
  • olive oil
  • 200 ml dry white wine
  • 800 g sea bass fillet
  • 4 egg tomatoes
  • 100 g black olives (pitted)
  • 1 tbsp freshly chopped basil

Instructions

    Preheat the oven to 180°C fan.

    Peel the potatoes, slice them and place in an ovenproof dish. Season with salt and pepper and drizzle with olive oil. Pour in the wine and bake for about 15 minutes, turning occasionally.

    Meanwhile wash the sea bass, pat dry and cut into four portions. Wash the tomatoes and halve them. Spread both together with the olives over the potatoes, season again and bake for another 10 minutes, spooning the cooking liquid over the top as needed.

    Sprinkle with basil before serving.
