Ingredients
- 500 g giant shrimp (frozen, pre‑peeled and cooked)
- 200 g mie noodles (asian grocery store)
- Salt
- 2 medium leeks
- 3 tbsp oil
- 0.5 tsp yellow curry paste
- 125 ml Vegetable broth
- 5 tbsp Soy sauce

Let the shrimp thaw, rinse, and pat dry. Cook the noodles in boiling salted water according to package instructions, drain and set aside.

Trim the leek, wash it, and cut the white and light green parts into matchstick‑sized strips.

Sauté the shrimp in hot oil for about 3–4 minutes until cooked through, season with salt, then remove. Add the leek to the pan, cook for about 3 minutes while stirring, then add the curry paste and stir briefly. Toss in the noodles, cook for another 3 minutes. Pour in the broth and soy sauce, bring to a boil. Fold the shrimp back into the dish, serve in bowls.
