Ingredients

  • 600 g pickled gyros meat
  • 400 g beans
  • 4 large tomatoes
  • 200 g rice
  • 2 tbsp chopped parsley
  • 1 onion (chopped)
  • Salt
  • pepper (ground)
  • oil for frying

Instructions

    Wash the rice, bring to a boil with double the amount of water and ½ tsp salt, then let it simmer on low heat until absorbed.

    Sauté the onion in a little oil, add the gyros, brown, then remove from heat.

    Wash the beans, trim ends, halve them, cook in heavily salted water for about 10 minutes, then shock with cold water and drain.

    Blanch the tomatoes, peel, halve, core, and slice into strips.

    Reheat the gyros, add the tomato strips, steam for 2-3 minutes, then add rice and beans, season with salt and pepper, mix well and heat through. Sprinkle with parsley before serving.
