Ingredients

  • 800 g pork
  • 1 tbsp spice mix (for gyros)
  • 6 tbsp Olive oil
  • 200 g large onions (2 large onions)
  • 3 Garlic cloves
  • 200 g cucumber salad
  • Salt
  • 3 sprigs parsley
  • 150 g yogurt (3.5 % fat) (or buttermilk yogurt)
  • 125 g quark (40 % fat)
  • 1 tbsp White Wine Vinegar
  • Pepper
  • 2 sprigs dill
  • 1 pinch sweet paprika powder
  • 200 ml meat broth
  • 4 medium tomatoes
  • 2 tbsp black olives

Instructions

    Cut pork into strips, place in a shallow dish, mix with spice and 5 tbsp oil. Peel onions, slice thinly, blanch briefly in boiling water, cool, drain well and mix with pork. Wash parsley, shake dry, finely chop and add. Cover and marinate in the fridge for 3–4 hours.

    Meanwhile peel garlic cloves and finely mince. Clean cucumber, peel, halve lengthwise and remove seeds with a small spoon. Grate cucumber coarsely, sprinkle with salt, let stand 10 minutes, then squeeze out water. Whisk yogurt and quark together until smooth. Stir in garlic, cucumber, remaining oil and vinegar, season with salt and pepper. Wash dill, shake dry, finely chop half and add.

    Heat a large pan, sear the pork seasoned with salt, pepper and paprika over medium heat for about 10 minutes while stirring, then remove from pan. Deglaze with broth, bring to boil and reduce slightly. Return pork to the pan and warm through. Taste again.

    Quarter tomatoes. Plate pork with tzatziki, garnish with olives, tomatoes and remaining dill.
