Couscous Salad with Chicken and Tomatoes

Ingredients

  • 350 g instant couscous
  • 400 ml hot vegetable broth
  • 300 g chicken breast fillet
  • Salt
  • Pepper
  • 4 tbsp olive oil
  • 6 tomatoes
  • 4 Spring Onions
  • parsley
  • 1 Red Onion
  • 1 tbsp Lemon Juice

Instructions

    Place couscous in a bowl, pour over broth and let it soak for about 10 minutes.

    Meanwhile rinse the chicken breast under cold water, pat dry, season with salt and pepper. Heat 1 tbsp oil in a grill pan, sear the chicken on high heat for about 4 minutes per side until golden brown. Reduce heat and cook the chicken at low heat for about 5 minutes to finish. Remove from pan, let cool, then slice into thin strips.

    Wash the tomatoes, quarter them and cut into wedges. Wash the spring onions, trim and slice into thin rings. Wash parsley, shake dry and chop leaves.

    Peel the onion and dice finely. Heat 1 tbsp oil in a pan, sauté the onion over medium heat until translucent, remove from heat and let cool.

    Fluff the couscous with a fork. Mix in chicken strips, tomatoes, spring onions, parsley, diced onion, lemon juice and remaining oil. Season with salt and pepper to taste.
