Ingredients

  • 400 g flour
  • 300 g whole wheat rye flour
  • 1 packet dry yeast
  • 0.5 tsp Sugar
  • 1 tsp salt
  • 0.5 l dark beer (e.g., Guinness or non-alcoholic ale)
  • fat (for the pan)
  • flour (for the pan)

Instructions

  1. 1.

Add all dry ingredients to a bowl and mix, stirring (hand mixer with dough hooks) gradually adding the beer until a heavy, even dough forms. Let the dough rise for about 45 minutes until it has doubled in volume. Grease a loaf pan and dust it lightly with flour. Pour in the dough. Preheat oven to 200°C. Knead the dough again, shape into a loaf, place in the pan and let rise another 15-20 minutes.

  2. 2.

Bake the beer bread on the middle rack for about 60-80 minutes. Reduce the temperature to 175 °C for the last 10–15 minutes, covering with foil if needed toward the end of baking.

  3. 3.

Remove the finished bread from the oven and brush the crust lightly with water so it shines.
