Ingredients

  • 100 g Dried Apricots
  • 120 g hazelnuts
  • 150 g raisins
  • 0.5 tsp Baking soda
  • 150 g brown sugar
  • 0.25 l water
  • 250 g whole wheat flour
  • 1.5 tsp Baking Powder
  • 2 Eggs
  • 1 pinch salt
  • 1 tbsp rum

Instructions

    Preheat the oven to 180°C fan.

    Chop the apricots and nuts and put them in a pot. Add the raisins, baking soda, sugar and ¼ l water, cook for about 5 minutes and then let cool. Mix the flour with the baking powder and add it over the fruit mixture. Whisk the eggs with the salt until frothy and fold in the rum and the batter. Shape the dough into a loaf and place it on a parchment‑lined tray. Bake on the lowest rack for about 60 minutes. Remove from the oven and cool on a wire rack.
