- 1 small ripe avocado
- juice and grated zest of 1 organic lime
- small green chili peppers
- 200 ml vegetable stock
- Salt
- Pepper
- 1 potato
- deep‑frying oil
- 100 g fresh salmon fillet
- 1 Spring onion
- pink peppercorns from the mill

Halve the avocado and remove the pit. Scoop out the flesh into a bowl with lime zest and juice. Clean, rinse, and chop the chili peppers. Add the stock and chilies to the blender. Blend until smooth and season with salt and pepper. Chill briefly.

Rinse the potato under running water and scrub clean. Slice lengthwise into eight very thin rounds. Heat the frying oil to 170 °C. Fry the potato slices until light brown, then drain on paper towels. Dice the salmon fillet finely. Clean, rinse, and finely chop the spring onion. Season the salmon with a pinch of salt and pink peppercorns, then mix in the spring onion. Blend the avocado mixture again briefly and pour into eight small shot glasses. Place one potato slice on each glass, top with the salmon tartare, and serve immediately.
