Grünkern Pancakes

Ingredients
- 1 onion
- 1 tsp butter
- 50 g grünkern groats
- 500 ml vegetable broth
- 150 g Frozen Peas
- 2 carrots
- 2 tbsp chunky oatmeal flakes
- 2 tbsp delicate oat flakes
- 2 tbsp sunflower seeds
- Pepper
- Salt
- herbs (to taste)
- peanut oil (for frying)
Instructions

Peel and finely chop the onion. Heat butter in a pot and sauté the onion. Add the groats and toast briefly. Pour in broth, simmer for 5 minutes, remove from heat and let stand for 10 minutes to absorb. Drain liquid and allow groats to cool.

Cook peas according to package instructions until firm, drain, rinse with cold water, and let cool. Meanwhile peel and grate carrots finely. Mix groats with peas, carrots, oatmeal flakes, and sunflower seeds into a dough and season well.

Wash herbs, pat dry, finely chop, and fold into the grünkern dough. Lightly oil a non‑stick pan, heat it, and fry hand‑formed patties on both sides until golden. Serve with a mixed salad.
